1 Skillet Chicken & Sausage Jambalaya
This 1 skillet recipe is a quick and easy fix when you are in a time crunch, but want a healthy, hearty meal! Throw this together in less than 30 minutes and call it a night!
- 8 oz. turkey andouille sausage, sliced 1/4 inch coins
- 1 large chicken breast, boiled, shredded
- 1/2 red pepper, chopped
- 1/2 green pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 C instant brown rice
- 1/2 C water
Submerge chicken breast in pot and bring to a boil. Boil until chicken is cooked thoroughly (165F), or white on the inside.
Heat skillet over medium heat, adding olive oil and non-stick cooking spray. Add sausage and peppers, cook 5 minutes, stirring occasionally.
Shred chicken with two forks, while sausage and peppers cooking.
Stir in chicken, tomatoes, brown rice, and water; bring to a boil on high heat.
Reduce heat to low, cover and simmer until rice is tender, about 10 minutes.
Remove skillet from heat and serve!
