Top 5 Quickest Dinners

If you're like me, at the end of the day, thinking about what to make for dinner is just the hardest task. While all I do is think about food, and talk about food, and read about food all day long for my job, sometimes I do not even want to look at it. But now I am responsible for feeding another human (my fiancé who can eat for 3). So, I have learned to never let a dinner take longer than 30 minutes to make! It is so easy to eat well, when you don't over think it, and stick to the basics. Here are my top 5 favorite, go-to, quick dinners!

 

1. Lemon Garlic Chicken with Roasted Broccoli*

Ingredients:

Chicken:

  • 4 (6 oz.) chicken breasts

  • 3 Tbsp olive oil

  • 3 Tbsp fresh lemon juice - I used juice from a whole lemon

  • 2 gloves garlic, minced

  • 1 tsp Italian seasoning

Broccoli:

  • 2 medium sized broccoli crowns, chopped into bite size florets

  • 2 Tbsp olive oil

  • 1 clove garlic, minced

  • 2 Tbsp grated Parmesan

Directions:

  1. Preheat oven to 425°F. Place chicken in a zip lock bag, set aside.

  2. In a small bowl, mix together olive oil, lemon juice, garlic and Italian seasoning.

  3. Pour mixture into bag with chicken; let marinade for 15 minutes, or up to 4 hours.

  4. Spray a baking sheet with non-stick cooking spray. Place broccoli on baking sheet, drizzle with olive oil, top with garlic and mix with hands until well coated. Spread around half the pan in an even layer.

  5. Remove chicken from bag and place on other half of baking sheet. Spoon remaining marinade onto chicken.

  6. Bake in oven for 18-22 minutes, until chicken is done (165°F) and broccoli is roasted.

  7. Sprinkle broccoli with Parmesan cheese and serve!

 

2. Lawry's® Turkey, Kale & Quinoa

Ingredients:

  • 1 lb ground turkey

  • 2 Tbsp Lawry's® 25% Less Sodium Seasoned Salt

  • 1 (10 oz) bag, Path of Life's Organic Quinoa & Kale

Directions:

  1. Spray a large pan with non-stick cooking spray.

  2. Season ground turkey with seasoned salt. Place in pan over medium heat.

  3. Using a spatula, chop turkey into bite size pieces. Stirring occasionally until turkey is browned, and done (165°F).

  4. While turkey is cooking, place frozen quinoa & kale bag in microwave. Heat up as directed.

  5. Divide quinoa & kale into 2 bowls. Divide turkey and place on top of quinoa & kale. Mix together and enjoy!

 

3. One Pan Lemon Garlic Shrimp & Asparagus*

Asparagus

  • 1 lb. thin/medium asparagus, ends trimmed

  • 1 Tbsp olive oil

  • 1 garlic clove, minced

  • 1/4 tsp salt

  • 1/8 tsp pepper

Shrimp

  • 1 1/2 lbs. medium uncooked, peeled shrimp, deveined

  • 1 Tbsp olive oil

  • 2-3 garlic cloves, minced

  • 1/2 tsp salt

  • 1/4 tsp paprika

  • 1/8 tsp pepper

  • 1/4 tsp red pepper flakes

  • 3 Tbsp chopped fresh parsley

  • 1 1/2 Tbsp lemon juice or more to taste

  • 3 Tbsp butter, cubed

Directions:

  1. Preheat oven to 400°F

  2. Line a cookie sheet with foil and spray with non-stick cooking spray. Place asparagus on foil, drizzle with olive oil and add garlic, salt and pepper. Toss until evenly coated. Lay asparagus in a single layer on one end of the sheet. Roast for 4-6 minutes.

  3. While asparagus roasts, remove tails from shrimp. In a small bowl, mix together salt, paprika, pepper, and red pepper flakes. 

  4. Remove pain from oven. Place shrimp on other end of pan, drizzle with olive oil and sprinkle with seasoning mix and garlic. Toss until evenly coated. Lay shrimp in single layer.

  5. Place 1 Tbsp cubed butter on asparagus and 2 Tbsp cubed butter on shrimp, evenly spaced. Cook for an additional 6 minutes, until shrimp is opaque.

  6. Remove pan from oven and drizzle with lemon juice. Top with parsley. Eat as is, or pairs well with brown rice or pasta.

 

4. OLD BAY® Tilapia 

Ingredients:

  • 2-5oz. plain Tilapia loins - I like Kirkland's

  • 2 Tbsp olive oil

  • 2 Tbsp OLD BAY® seasoning

 

Directions:

  1. Spray nonstick cooking spray on a large pan. Set on medium heat.

  2. With a cooking/pastry brush, brush one side of each loin with olive oil. Sprinkle 1/2 Tbsp of seasoning, or as desired. Flip loin over and repeat on other side.

  3. Place loins in pan and sear 5-6 minutes on each side, until fish is white and flakes (145°F).

  4. Pairs well with corn on the cob and brown rice. Try topping your corn with OLD BAY® seasoning for a new flavor!

 

5. Turkey Meatballs with Pasta

Ingredients:

  • 1 lb. ground turkey

  • 1 egg

  • 2 Tbsp onion powder

  • 2 Tbsp garlic powder

  • 1/4 C bread crumbs

Directions:

  1. Preheat oven to 375°F.

  2. In a bowl, place turkey meat, egg, onion powder, garlic powder and bread crumbs. With clean hands, mash together and mix well.

  3. Roll the mixture into 1-2 inch balls. Place on a grease baking sheet.

  4. Bake for 15-20 minutes, turning balls halfway through, until 165°F.

  5. Serve with your favorite pasta and sauce. Pairs great with a vodka sauce!
